This fresh duck Grade "A" foie gras is very tasteful with a pleasant cream color and a firm texture. The liver, which is immediately removed from the animal's carcass, is allowed to cool by a steady reduction in its surrounding temperature. One hour later, the liver is flash-frozen, then skin-packed to retain its fresh flavor and aroma. Many of Fabrique Delices products have been served at the White House. Comes in a full lobe of approx. 1.3Lbs.
